  16. Wild Rice Risotto (with Chicken and Cashews)
  17. Serves 4

  19. 200g wild rice
  20. 4 fillets chicken
  21. 2 onions
  22. 1 leek (or spring onions)
  23. butter/margarine/oil (whatever your preference)
  24. 30g Cashews
  25. 2 tbspns Sherry (or something similar)
  26. salt, ground pepper
  27.  
  28. (Again this is an Austrian recipe, so please forgive the sentence
  29. structure)
  30.  
  31. -       Rinse the rice in a "hair sieve"- fine grid. Bring 800 ccm water
  32. to the boil (just over a pint, from memory) and add the rice- cook 5 mins.
  33. Turn the heat to very low, place a lid on the saucepan, and cook until the
  34. water is evaporated (about 40 mins.)
  35. -       Cut the chicken into chunks, cut the onion into slices, and cut
  36. both the white and green parts of the leek/spring onions in to slices.
  37. -       Heat the butter/marge/oil, and brown the chicken one minute. Add
  38. the onion slices and cook one minute, add the cashews and cook one minute,
  39. then add the leek (or whatever) and cook one minute (surprise, surprise....)
  40. -       Add the rice and toss through, then slosh in the Sherry, salt
  41. and pepper.

  43. Serve with a green salad... Nice and light for a hot day
